A couple of months ago, I attended a hands-on culinary workshop at a community centre in Bristol. I had been feeling stuck in a bit of a rut with my diet, relying far too much on ready meals after long working days, so when a colleague mentioned a weekend session on nutritious meal prep, I decided to sign up straight away.
The workshop was run by an experienced nutritionist who also works as a freelance chef. Her speciality was plant-forward cooking and making balanced meals without spending hours in the kitchen. There were about ten of us in the group, which made the whole atmosphere really friendly and interactive. We all had our own preparation stations with fresh, seasonal produce.
During the three-hour session, she demonstrated several practical techniques. For instance, she showed us how to batch-cook whole grains and legumes, and how to create versatile dressings using simple pantry staples like tahini, lemon juice, and herbs. One trick that really stuck with me was roasting a huge tray of mixed Mediterranean vegetables to use across different dishes throughout the week, from warm salads to grain bowls.
To be honest, what I found most valuable was how practical everything was. Before the workshop, I used to think cooking from scratch had to be time-consuming and complicated, but she showed us that with a bit of forward planning, it is remarkably straightforward. Since then, I have managed to cut down on processed food and save quite a bit of money on my weekly grocery bill. It genuinely transformed how I approach my evening meals.
