Test rules at CUHK
The undergraduate page says results from the TOEFL iBT Home Edition and TOEFL Best Scores will not be accepted. The Graduate School says TOEFL and IELTS results are valid for two years from the test date, and that some programmes add their own requirements on the programme page.
On the same pages, CUHK asks undergraduates for IELTS 6.0 overall and postgraduates for IELTS Academic 6.5.

If your TOEFL score falls short
Postgraduate applicants can also meet the rule with a degree from a Hong Kong university or a degree taught in English, or with the GMAT Verbal levels the Graduate School lists. The pages read for this guide do not describe a pre-sessional route.
Requirements vary by programme and change between admissions cycles. The score that binds you is the one on your CUHK programme page and in your offer letter, so check it there before you book a test.
