If I had to talk about a special dish, I would definitely choose 'Biryani', which is an incredibly aromatic, spiced rice dish that is an absolute staple at weddings in my family. In the South Asian culture I grew up in, a wedding feast simply wouldn’t be considered authentic or complete without these massive, steaming pots of fragrant rice served to guests. The preparation process is quite a labour of love. It involves marinating chicken or lamb in a thick mixture of yoghurt, fried onions, turmeric, and a blend of secret spices, often including saffron and star anise. The meat is then partially cooked before being layered with partially boiled basmati rice. The pot is sealed with dough to trap the steam, a technique we call 'dum', which allows the flavours to infuse deeply into every single grain of rice. People serve it on these occasions because it is essentially a celebratory dish that implies generosity and abundance. Because it takes so long to prepare properly, it’s not something you’d whip up on a typical Tuesday night. When you see a huge platter of Biryani placed in the centre of a table, it signals to everyone that this is a moment of joy, unity, and communal happiness. The complex blend of spices and the rich texture of the meat make it an indulgent treat that everyone looks forward to. It’s more than just sustenance; it’s a shared experience that brings extended family members together, creating a sense of belonging and nostalgia that defines our most important gatherings.
