A couple of years ago, I had the most bizarre culinary experience of my life while travelling through the Scottish Highlands. My partner, Ewan, and I were staying in a remote village near Inverness, and we decided to dine at a local gastropub that prided itself on serving authentic, historical recipes. We were expecting traditional haggis, but the chef had curated a special 'foraged and fermented' menu that caught us off guard. We were served a dish that looked like a plate of dark, earthy moss topped with what I initially thought were dried berries. It turned out to be a starter of deep-fried lichen served with a side of fermented seaweed paste. The texture was incredibly brittle, almost like eating crispy autumn leaves, and the flavour profile was jarringly acidic, which was quite a departure from the hearty, savoury meals I usually enjoy. It was unusual primarily because it challenged my entire perception of what constitutes 'edible' food. Most meals involve staple ingredients like grains or proteins, but this felt more like an experiment in foraging chemistry. Furthermore, the setting made it even more surreal; sitting in a dimly lit, stone-walled cottage while consuming something that had literally been scraped off a nearby rock felt incredibly primitive. Although I wouldn't rush to order it again, the meal was a fascinating exploration of local history and terroir. It wasn't just about sustenance; it was an artistic statement about how ancient cultures survived in such a harsh climate, which made the strange flavours feel strangely meaningful by the end of the evening.
